Japanese Recipes called Kabocha Nimon カボチャ煮物

Here’s todays Japanese recipe side dish called “Kabocha Nimono” or Cooked Pumpkin. My hubby wanted to eat this last so I made it. Very easy and simple to make and goes great with any main dish. So let’s get start, by getting what ingredients we need.
Ingredients
  • 500g ½ kabocha squash (pumpkin)
  • 2 cup of dashi soup stock
  • 3 tbsp of brown sugar
  • 4 tbsp of soy sauce
  • 1½ tsp of ocean salt or regular salt is fine
  • 5g of katsuo bushi

Instructions
  1. Prepare the Dashi Soup:
  2. First boil 2 cups of water in a small sauce pan.
  3. Turn the heat down to low and put katsuo bushi (see photo) into the hot water.
  4. Let it steep for 15min.
  5. Take out the katsuo bushi, and your dashi is done.
  6. Kabocha Nimono:
  7. Cut Kabocha into a bite size.
  8. Put all the ingredients into a pot and cook in low heat for about 1hr or more (until Kabocha is soft).
