Braised Alfonsino(Kinme-dai Nitsuke)

Here’s a tasty Japanese dish called “Kinme-dai Nitsuke” or Braised Alfonsino in English. Our family would like to eat this fish often but the supermarket near us rarely carries this fish. I have to send my hubby to the fish market which is a couple hours away by train. Lol Well, I hope you enjoy making this dish. So let’s get started with what we need to make our Braised Alfonsino.
Ingredients
  • 2 whole Alfonsino(golden eye bream)
  • 1½cup water
  • ¼ cup sake
  • 2 tbsp sugar
  • 4 tbsp soy sauce
  • 4 tbsp mirin

Instructions
  1. Rinse the Alfonsino under the cold water, and drain with paper towel, and make a cross-shape incision on one side.
  2. Combine the water, sake, soy sauce and mirin in a large shallow pot or frying pan, and bring to the boil. Add the fresh ginger and cook for 30seconds. Add the Alfonsino with some space in between, place a drop-lid on top of it and over medium low heat.
  3. When the liquid is reduced to about half.
  4. Carefully lift the fish on to serving plates and spoon some of the cooking liquid over it.
