Bream-Rice Ball 鯛の手まりにぎり

Ingredients
  • 200g bream fillet
  • 4-5 leaves green perilla, cut into half
  • 2 sheets konbu kelp (15 cm x 15 cm, square )
  • sesame
  • salt
  • For vinegar rice:
  • 2cup rice
  • (A)
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt

Instructions
  1. Soak the konbu kelp in a water quickly, and wrap it in a plastic film and soften.
  2. Cut the bream into 5mm thickness, and sprinkle the salt. Put the bream on the one pieces of konbu kelp and put on konbu kelp, and let stand for about 2 hours.
  3. Make the vinegar rice: Combine the ingredients for (A), and mix well. Cook the rice with rice cooker, and transfer to bowl. Sprinkle the (A) all over the rice, and toss the rice with horizontal, cutting strokes while cooling the rice. when cool, make to 8-10 portion rice ball.
  4. Put the 2 pieces bream on the plastic film, and put the green perilla on the bream, and put the one portion of rice, and then make to rice roll.
  5. Take off the plastic film and sprinkle the sesame.
