Pickled Cucumber and Ginger きゅうりとしょうがの浅漬け

Good Morning Everyone, I hope that everyone had a great Weekend. My weekend was a little busy, trying to make a great dinner for the hubby on his birthday. It turn out great and he liked everything that me and the kids made for him. Today’s Japanese Cooking Recipe is called Pickled Cucumber and Ginger or きゅうりとしょうがの浅漬け in Japanese. This is a great appetizer or side dish meal when you have guest over the house. It’s great with Japanese Rice Wine (Sake). I hope you like it. Well, let’s see what we need to make our Pickled Cucumber and ginger.
Ingredients
  • 1 cucumber
  • 1 knob ginger
  • 1 tsp salted konbu kelp (konbu shio)
  • 50cc water
  • dried bonite flakes
  • dashi soy sauce

Instructions
  1. Cut the cucumber into thinly slices with slicer, and cut the ginger into thinly slice and strips.
  2. Place the salted konbu kelp and wanted in a bowl. Soak the cucumber and ginger for about 5 min, then squeeze out of moisture. Place in a plate, sprinkle the dried bonito flakes. Your choice, pour the dashi soy sauce.
