Hot Pot with Duck 鴨鍋

Well, back to the Cooking. Today’s Cooking Japanese Style is called Hot Pot with Duck or 鴨鍋 in Japanese. This is a very delicious dish, we usually have this during winter season cause it get very cold here and Hot Pot meals warms up the body very well. It is sometimes hard to find duck in the supermarkets, so we have to go downtown China Town to pick this up. That’s when the hubby is in a good mood. Ingredients
  • For Duck Meat Ball:
  • 250g duck breast
  • 100g thinly slice pork
  • 50g yam
  • 3 tbsp chopped long green onion
  • 1 tbsp flour
  • 1 egg white
  • 1 tbsp sake
  • 1 tsp grated garlic
  • 2 tsp chinese soup paste
  • soy sauce, pepper
  • Other ingredients:
  • 1 pack tofu
  • 8 shiitake mushroom
  • 4 bunch pak choi
  • 4 stalks water cress
  • For Dipping sauce:
  • 2 tbsp miso
  • 2 tbsp vinegar
  • 1 tbsp sugar
  • 1 tbsp chinese chili beans paste
  • 1 tsp soy sauce
  • sesame oil
  • For basic soup:
  • 6cups water
  • 1tbsp chicken soup stock(granulated)
  • ¼ cup sake

Instructions
  1. Make to meat ball: Chop the duck and pork in roughly, and in a food processor, and peel and grate the yam. Put the minced meat in a bowl, add the long green onion, garlic, soup paste, sake, egg white, flour, yam, soy sauce, and pepper and mix well.
  2. Cut off the roots of the pak choi and water cress, cut them into 5-6㎝ pieces, and cut the tofu into 8 pieces, cut off the stems of the shiitake mush rooms.
  3. Combine the ingredients of the miso dipping sauce.
  4. Make to basic soup: Place the water , soup stock, and sake into a pot, and over high heat, and bring to the boil.
  5. Using 2 spoons mold the meat mixture into balls and drop them into the soup.
  6. When the meatballs are slightly cooked, add the tofu, shiitake mush rooms, and pak choi, and cook through, finally, add the water cress and cook briefly.
  7. Serve in individual bowls with the dipping sauce and the condiments.
  8. Condiments: chili pepper, grated ginger chopped green onion etc.
