Stir-Fried with Taro and Pork AMAKARA-Style 里いもと豚肉の甘辛煮

Well, Thursday’s recipe on Cooking Japanese Style is another delicious dish submitted by “Moe chan” called Stir-Fried with Taro and Pork AMAKARA-Style or 里いもと豚肉の甘辛煮 in Japanese. It’s simple and easy to make for the family; this can be a side dish or main for dinner. Enjoy and we will see you all tomorrow for Friday’s Recipe.
Ingredients
  • 250g Japanese taro
  • 250g sliced pork belly
  • ½ tbsp vegetable oil
  • 2 cups dashi stock
  • ¼ cup sake
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp mirin
  • Japanese mustard

Instructions
  1. Peel the taro and sprinkle the salt and wash. Boil the taro for about 3 min, drain and wash.
  2. Cut the pork 3 ㎝ square pieces. Heat the oil in a frying pan, fry the pork briefly, eliminate the excess oil with kitchen paper.
  3. Place the dashi stock, sake, sugar, and mirin in a pot, and over a heat. When it starts boiling, add the taro and pork, and simmers for about 5 min.
  4. Add the soy sauce and simmer until taro is soften.
  5. Serve with Japanese mustard.
