Hello everyone how your weekend?  Boy I have to say last night was a really long event.  I was expecting to be home around 1am at least, we had to stay to the end which at 3am and we didn’t get home until 4:30am this morning.  So tired and the body is just down for the count.  Surprising I don’t have a headache, which I always get when I go drinking.

Japanese Style Curry with Deep-Fried Thick Tofu 厚揚げの和風カレー

Well, enough of that story let’s get back into the kitchen. Today’s recipe is called Japanese Style Curry with Deep-Fried Thick Tofu or 厚揚げの和風カレー in Japanese. This one recipe my family loves to eat, so this time I try something a little different and added Deep-Fried Tofu into my curry, instead of using beef or any sea foods. Ingredients
  • 200 grams Deep-Fried Thick Tofu
  • 75 grams Sliced Pork ( If you are vegetarian, you don’t have to use)
  • 2 Eggplants
  • 1 Tomato
  • ½ Long Green Onion
  • 100 grams Boiled Bamboo
  • 80 grams Curry Roux Mix(seller in store)
  • ½ Curry Powder
  • 400 cc Dashi Stock
  • 1½ tablespoon Japanese Sake
  • 1 tablespoon Mirin
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Vegetable Oil

Instructions
  1. Pour the hot water over the deep-fried tofu and remove to excess oil. And cut into bite-size pieces.
  2. Peel the tomato and cut into chop, and cut the eggplants in half lengthwise and slice, long green onion into 3㎝ width pieces, boiled bamboo and sliced pork into bite-size pieces.
  3. Heat the oil into a pan, Add the pork, egg plant, boiled bamboo, long green onion, and tomato and fry together.
  4. Add the dash stock, sake, miring, and soy sauce, and simmer . When it become boiling, remove the form and add the deep fried thick tofu, and simmer for about 7-8 min.
  5. Add the curry roux mix and curry powder and simmer for about 5 min.
  6. Serve with cooked rice.
