Lemon Cream Pie レモンクリームパイ

Here’s is a Delicious Lemon Cream Pie I always wanted to try to make for my family. Being that this is my first time making it, it turn out great and the family Love it very much. Now that gives me, a bit of confidence to explore more into Desserts now. Enjoy
Ingredients
  • For 20㎝ Circle Pie Pan
  • 57g Flour
  • 57g Bread Flour
  • ⅓ tsp Salt
  • 30g Butter
  • 25cc Vegetable Oil
  • 1¾ tbsp Water
  • For Lemon Cream
  • 180g Sugar
  • 4 tbsp Corn Starch
  • ⅕ Salt
  • 85 cc Water
  • 85 cc Lemon Juice
  • 250 cc Hot Water
  • 1 tsp Lemon Zest
  • 10g Butter
  • 2 egg York
  • 150cc Fresh Cream
  • 1 tbsp Sugar
  • 1 Lemon Zest
  • ½ Vanilla Extra

Instructions
  1. Make to pie pastry : Put the flour and salt into a large bowl, mix well. Add the cut the small size butter, and vegetable oil and mix roughly until like crumbs.
  2. Add the water and mix like a tossing.( please don’t knead!)
  3. Put the dough on a Large size(40㎝×40㎝) plastic film, and cover the same size plastic film. Roll pastry dough so that 28㎝ circle size. Put in a pie pan and prick pastry with a fork. Let stand for 30minute in a refrigerator.
  4. Bake the pastry in oven at 200℃ for about 15-20 minute.
  5. Make to Lemon cream : Put the Sugar, corn starch and salt into a pot, and mix well. Add the water and lemon juice .
  6. Beat the egg york into a other bowl, Add to pot and mix well and add hot water.
  7. Heat the pot a low heat, and bling to the boil while stir-mix. When it become to the boil, turn off the heat and add the butter and lemon zest.
  8. Pour the lemon cream to pie pastry still hot. Let stand for cool in refrigerator .
  9. When the lemon cream is cold, whip the fresh cream and add the sugar, lemon zest, and vanilla extra, and mix, spread on the lemon cream. Garnish with lemon zest.
