Crispy Gizzard Salad 砂肝サラダ

- 200g gizzard
- ½ pack rocket
- ½ baby leaf
- 2 leaves lettuce
- ½ glove garlic
- 2 tbsp olive oil
- 2 tbsp white wine vinegar
- salt and pepper
- Cut the gizzard into 4 equal pieces and cut the garlic into mince.
- Place 1 tbsp. olive oil and garlic in a frying pan and over a low heat, and fry. When the garlic becomes brown, remove the garlic from the frying pan. Add the gizzard, salt and pepper and fry over a high heat until crispy.
- Soak the vegetable in cold water for about 10min, and drain and pat, and tear into bite-size. Place the vegetables in a bowl, add 1 tbsp. olive oil, vinegar, salt and pepper and mix briefly, add the gizzard and arrange to a plate
