Sweet Potato Parfait さつまいものパフェ

Serves: 4 - 6
- 1 sweet potato
- vanilla essence
- 1 tbsp rum liqueur
- A:
- 3 tbsp granules sugar
- 1 tbsp water
- 1 tbsp hot water
- B:
- 100 cc fresh cream
- 1 tbsp brown sugar
- 1 tbsp rum liqueur
- For Earl Grey Tea Ice cream:
- 4-5 tbsp earl grey tea
- 1 cup vanilla ice cream
- 5 tbsp plain yogurt
- ¼ lemon juice
- 1 tsp granules sugar
- Four hours before eat, combine the ingredients of "Earl Grey Tea Ice cream”, and put into the freezer. When it becomes stuck a little, stir it whole, and put into the freezer, repeat itself twice.
- Peel the sweet potato and cut into 1㎝ square pieces, and boil. then, almost liquid is gone, while mashing stir, and moisture it spatter. Add the vanilla essence, and rum liqueur and mix.
- Place the ingredients of "A” into a pan, over a heat, boiling down in like a candy condition, it little burn. Turn off the heat, add the hot water ,make to caramel sauce. Then, add the sweet potato, and mix.
- Place the fresh cream into a bowl, add the brown sugar and rum liqueur and beat until soft and creamy.
- Arrange the sweet potato, ice cream, and whip cream in a serve bowl or glass.
