Eggplant and Tomato Guratan 茄子とトマトのグラタン

- 3 eggplant
- 1½ tbsp olive oil
- gruyere cheese
- salt and pepper
- for tomato sauce:
- 12 mini tomato
- ½ knob garlic
- 1 tbsp olive oil
- salt and pepper
- First, make to tomato sauce. Cut the mini tomato into mince roughly. Cut the garlic into thin slice. Heat the olive oil in a small pot and fry the garlic until light brown color over a low heat. Add the tomato and salt, stir-simmer until almost liquid is gone. Finally, add the pepper.
- Cut the eggplant into large bite size pieces, and fry with olive oil. Then, steam- fry with cover with lid.
- Place the eggplant in a gratin dish, spread the tomato sauce on top of the eggplant and put the gruyere cheese on top. And Bake in oven at 200 ℃ for about 20 min.
