Chicken Meatball Noodles 鶏団子ヌードル

- For soup
- 200g chicken
- 4 cups water
- ½ tsp salt
- ½ clove ginger, cut into thinly slice
- For Chicken meatball:
- 100g ground chicken
- 2 tbsp onion, cut into mince
- ⅓ tsp grated garlic
- ½ tbsp potato starch
- pinch of salt
- 100g rice noodles(bifun) or pho( Vietnam rice noodles)
- a little of salt
- a grab of sprout
- coriander, fresh, cut into chopped
- Put the ingredients for soup in a pot, and place over a heat. When it comes to boil skimming off foam and simmer for 7-8 min. Turn off the heat, and let stand cool.
- Put the ingredients for chicken meatball in a bowl, mix well and make rolling 6 meatballs.
- Remove the chicken from soup stock, and cut into slice. Place the soup over a heat and when it comes to boil, add the meatballs. When it heated through, add the sake and season with salt, add the sprouts and turn off the heat.
- Place the boiled rice noodles, chicken meatballs, and pour over the soup, sprinkle the coriander, serve immediately. Your choice, garnish with lime and soy sauce or fish sauce.
