Day #5 Omelet with Potatoes(ポテトオムレツ)

- 2 large potatoes
- ¼ onion
- ⅓ carrot
- 3 eggs
- 1 knob garlic
- salt and pepper
- vegetable oil
- Boil the potatoes briefly and cut into slice. Cut the onion and carrot into thinly slice. Cut the garlic into finely chop.
- Heat the oil in a frying pan, add the garlic and over a low heat. When it starts to smell good, add the onion, carrot, and potatoes over a medium heat. Steam-fry with cover and transfer on a plate or bowl and lets stand for cool.
- Drop the eggs in a large bowl and beat. Add the Steam- fried potatoes and mix. Heat the oil in a pan; pour the egg mixture with cover and steam- fry for 7-8 min over a low heat. Turn over the egg, and fry the other side for about 5 min.
