Chicken Beans Salad

  • 250 g chicken breast
  • 2 spring onion
  • 2 tsp crushed ginger
  • 1 tbsp sake
  • 1⅓ cups green string beans
  • 1 tbsp mayonnaise
  • 1 tbsp milk
  • 1 tsp granulated chicken stock powder
  • salt and pepper

  1. Put the chicken into a pan and just enough cold water to cover. Add spring onion, ginger, and sake and boil until the chicken cooked, and remove the chicken. Let stand cool.
  2. When cool the chicken, roughly shred the chicken, and set aside.
  3. String the beans and chop in half diagonally boil the beans for a few minutes. (taking care not to overcook then) and Drain and dry.
  4. Put the beans and chicken a bowl. Combine the mayonnaise, milk and granulated chicken stock powder and stir into beans and chicken. Season with salt and pepper. Serve and immediately.
