Grilled Mackerel 鯖の香味焼き

Good Afternoon Everyone, Yet another sunny day in Japan today. We are planning to have a picnic later this afternoon with some of the neighbors. So I have to make some lunch and snacks for the outing. Well, today’s Japanese Recipe is called Grilled Mackerel; since I haven’t post any fish Japanese Recipes lately I figure I should post at least one a week. Well, let’s get started with what we need to make our Grilled Mackerel Dish.
Ingredients
  • 500-600g mackerel fillet , cut into 4 piece
  • 2 tbsp mirin
  • 2 tbsp sugar
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tsp red miso
  • 1 tbsp grated ginger
  • 3-4 leaves cabbage
  • butter
  • salt and pepper
  • chopped spring onion for garnish

Instructions
  1. Place the mirin, sugar, soy sauce, vinegar, miso and ginger in a large bowl and mixing well.
  2. Lightly season with salt the Mackerel, and let stand for 5 min, and pat dry. Place in the marinade “1” and set aside for about 30 min. And preheat oven to 220℃.
  3. Line a baking tray with wax paper and place the drained Mackerel piece skin side up. Place into the oven and bake for 15 min. ※ If you do not use the oven, you can make use frying pan. Preheat a frying pan, coat with few vegetable oil and cook it over a medium low heat with covered.
  4. Cut the Cabbage into bite-size, and heat a frying pan, add the butter, when melt the butter, put the Cabbage and quickly fry and season with salt and pepper.
  5. When cooked for Mackerel, remove them from oven. Place the cooked Cabbage on dish with the Mackerel on top. Sprinkle chopped spring onion on top.
