Mabo-Tofu Japanese-style 和風麻婆豆腐

Serves: 4

  • 1½ pack hard tofu
  • ½ long green onion, cut into finely chop
  • 1 knob ginger, cut into finely chop
  • 200g ground chicken
  • 1 tbsp water and 1 tbsp starch
  • sesame oil
  • Condiment:
  • A:
  • 2 tbsp miso
  • 1 tbsp sake
  • 1 tbsp soy sauce
  • 2 tsp sugar
  • ⅕ chili powder(Japanese)
  • ⅔ cup dashi stock
  • salt and pepper

  1. Cut the tofu into 2 ㎝ square pieces, and put on the ZARU( sieve), drain briefly. Combine the ingredients of condiment and mix well.
  2. Heat the oil in a frying pan and add the long green onion and ginger, then fry. When it starts to smell good, add the ground chicken and fry.
  3. Add the Condiment mixture in a frying pan. When become to bring boil and add the tofu simmer briefly. Add the starch dissolved in the water to thicken it. Pour the sesame oil and garnish with radish sprout your taste.
