Pork Saute with Grain Mustard sauce ポークソテーの粒マスタードソース

Well Thursday’s recipe on Cooking Japanese Style is a dish called Pork Sauté with Grain Mustard Sauce or ポークソテーの粒マスタードソース in Japanese. A couple days ago I posted a Pork Saute with Mayo it’s made the same way, just with a different sauce. Very delicious and easy to make, enjoy and we will see you all tomorrow.
Ingredients
  • 4 slice pork loin
  • salt and pepper
  • ½ onion
  • 4 shiitake mushrooms
  • vegetable oil
  • 1 tbsp grain mustard
  • 50 cc mirin
  • 50cc dashi stock or water
  • 3 tbsp soy sauce
  • ½ sugar
  • 1 tbsp butter

Instructions
  1. In a few places, slash the sinew running between the fat and lean tissue with a knife. Strike the entire surface of the pork, and sprinkle salt and pepper.
  2. Cut the onion and shiitake mushrooms into a thinly slice. Heat the oil in a frying pan and sauté the onion and shiitake mushrooms. Season with salt and pepper. Set aside.
  3. Heat the oil in a other frying pan, and sauté the pork.
  4. Put the mirin in a pan, and simmer for short time to let the alcohol evaporate. Add the dashi stock, soy sauce, and sugar and mix. Turn off the heat and add the butter and grain mustard and mix.
  5. Place the sautéed pork, onion, and shiitake mushroom on a plate. Pour the sauce over the top.
