Dried Sweet Potato and Tofu Muffin(干し芋と豆腐マフィン)

  • 120g Tofu
  • 2 tbsp vegetable oil
  • 2 tbsp maple syrup
  • 100g flour
  • 1 tbsp baking powder
  • a pinch of salt
  • 80g dried sweet potato, cut into 7㎜ square pieces
  • 1 tbsp black sesame

  1. Blend the tofu, vegetable oil, and maple syrup in a food processor.
  2. Transfer the “1” into a bowl. Sift and mix the flour, salt and baking powder and add the dried sweet potato. Add the black sesame mix briefly.
  3. Fill each the muffin mixture into a muffin cup, Place into the oven a 180℃ and bake for about 25min.
