Cream Crab Croquette カニクリームコロッケ

My Family was in the mood for eating some Croquette and the hubby brought home some fresh crab from the fish market. So I decided to use the fresh crab meat and make the croquette with it, I think this was my first time use fresh crab meat. I usually use imitation crab, but I have to say using the fresh crab does really make the taste more delicious. So I hope you enjoy this recipe and we will see you all tomorrow. Keep on Cooking!!
Ingredients
  • For White Sauce:
  • 6 tbsp Butter
  • 6tbsp Flour
  • 450cc Warm Milk
  • ½ tsp Salt
  • Main Ingredients:
  • 120g Onion, Finely Chop
  • 50g Celery, Finely Chop
  • 120g Crab Meat
  • ⅙ tsp Black Pepper
  • 2 tbsp Sake
  • ⅕ tsp Nutmeg
  • ⅕ tsp Clove
  • ¼ Salt
  • 1 tbsp Water
  • 1 Egg
  • ¼ cup Flour
  • 2 cups Bread Crumbs
  • Vegetable Oil for Deep Fry

Instructions
  1. Make to white sauce : Heat the frying pan, add the butter, when it the melted, add the flour and fry for about 5 minute.
  2. Remove the frying pan from the heat, add the warm milk, and mix well with whisk, Place the heat again, stir-mix with wood spoon until sauce is boiled. Add the salt.
  3. Heat the oil into a other frying pan, add the onion and celery and fry. Add the crab meat, sake, nutmeg, clove, black pepper and white sauce and mix well. Let stand cool for about 1 hour in refrigerator.
  4. Shape into the roll,coat the flour, combine the water and egg beaten, then breadcrumbs. Deep fry at 170℃ degrees until crispy.
