Chicken Meatball Noodles 鶏団子ヌードル

Good morning, Everyone, Japan starts its holidays from today. Also weather is to be good and sunny. Now for today’s Japanese Recipe called Chicken Meatballs Noodles. I use rice noodles but even a Vietnamese “pho” and Japanese noodles are nice. A coriander and a lime and fish sauce are ethnic. The dish becomes Japanese when using spring onion and soy sauce. So try variously. I hope you enjoy this recipe. Well, let’s get started with what we need to make our Japanese Recipe Chicken Meatballs Noodles.
  • For soup
  • 200g chicken
  • 4 cups water
  • ½ tsp salt
  • ½ clove ginger, cut into thinly slice
  • For Chicken meatball:
  • 100g ground chicken
  • 2 tbsp onion, cut into mince
  • ⅓ tsp grated garlic
  • ½ tbsp potato starch
  • pinch of salt
  • 100g rice noodles(bifun) or pho( Vietnam rice noodles)
  • a little of salt
  • a grab of sprout
  • coriander, fresh, cut into chopped

  1. Put the ingredients for soup in a pot, and place over a heat. When it comes to boil skimming off foam and simmer for 7-8 min. Turn off the heat, and let stand cool.
  2. Put the ingredients for chicken meatball in a bowl, mix well and make rolling 6 meatballs.
  3. Remove the chicken from soup stock, and cut into slice. Place the soup over a heat and when it comes to boil, add the meatballs. When it heated through, add the sake and season with salt, add the sprouts and turn off the heat.
  4. Place the boiled rice noodles, chicken meatballs, and pour over the soup, sprinkle the coriander, serve immediately. Your choice, garnish with lime and soy sauce or fish sauce.
